The answer is very simple. Fiber absorbs carbs and then slowly releases them back into your system. Without the fiber your blood sugar would spike and then fall. As diabetics, especially if you are on insulin, you want to keep your blood sugar at an even level, avoiding rapid rises and falls.
Just eat more fruits and vegetables with your meals, making sure that you are still within the diet your doctor suggested. There are exchange lists you can consult for this.
