Pineapple Ham- Diabetic Friendly

  • 1 can (8-1/4 ounces) sliced pineapple
  • 1 boneless fully cooked ham slice (6 ounces), cut in half
  • 1 tablespoon butter
  • 1-1/2 teaspoons cornstarch
  • 3/4 teaspoon ground mustard
  • 3 tablespoons apple juice
      Drain the pineapple and reserve the juice. Add water to juice to make 1/2. Brown pineapple and ham then remove from heat and keep warm. In the same pan melt your butter and stir in mustard and cornstarch. Add the apple and pineapple juice, bring to a boil then simmer and stir till thick for about 2 min. Pour over ham and pineapple. Serves 2.
